A son to the soil of Jamaica and past student of the Runnaway Bay Heart, who currently resides in the United States of America, has been pushing the envelope toward modernizing Jamaican desserts.
Chef Winston has been a part of the taste of the Caribbean Culinary team and has been voted Pastry Chef of the Year. His skills and talents range from chocolatier and sugar work to traditional and modern desserts, among other disciplines.An accomplished professional chef with a strong foundation in Pastry Arts, has received state of the art training at the Culinary Institute of America and several certifications among them being in Modern Vegan Pastry.
With years of experience in high-end establishments such as Waldorf Astoria, Fisher Island Country Club and Four Seasons, he bring exceptional skills in creating Artisanal Breads, Pastries, Exotic Cakes and French Viennoiserie.
Known for developing innovative seasonal recipes, supervising various sized bakery teams and ensuring compliance with food safety standards, he excels in the amazing craft that he does.
His expertise spans from menu development, event coordination, inventory management and staff training that generates operational efficiency. Apart from catering to dietary restrictions and executing large-scale productions, this chef combines creativity with meticulous attention to detail to consistently deliver high-quality Culinary Experiences.
