Our Mission 

Our mission is to educate and empower the culinary workforce and the broader community to embrace creativity with local ingredients, thereby fostering a meaningful impact on the social and economic landscape of Jamaica and the Caribbean.

Where Did It Start

In the rugged mountains of eastern Jamaica, the Windward Maroons sought refuge from colonial oppression. Forming alliances with the Indigenous Taíno and Arawak tribes, they created a unique community that blended their diverse cultures. Together, they shared culinary knowledge, particularly in crafting Caribbean dishes that celebrated the island's natural abundance. Utilizing tropical ingredients like cassava, yams, and native spices such as allspice and Scotch bonnet peppers, they developed methods to preserve these flavors, ensuring sustenance and a taste of home even in hiding. These dishes became more than mere sustenance; they symbolized freedom and resilience, encapsulating the essence of their shared heritage. Today, the rich flavors and techniques they pioneered continue to define Caribbean cuisine, honoring the creativity and determination of the Maroons and the island's original inhabitants.

Over 400 years of recipes are being forgotten, and along with them, the essence of our heritage.

Beloved dishes like sweet potato pudding, cornmeal pudding, traditional way of preparing Jerk, oxtail, curried goat —staples of our culinary culture—are in danger of disappearing. As indigenous ingredients vanish, so too does our ability to recreate the flavors that define us, weakening our connection to our ancestors and our story.

Understanding the urgency of this crisis, we created this Indigenous Cuisine Masterclass—a proven system designed to revitalize the thousands of traditional dishes passed down by the indigenous people of each of the Caribbean Islands and the Jamaican Maroons.
